Kölsch is a beer, a language, an attitude, and sometimes a source of conflict if someone orders an Alt. Ideally, it's an invitation, not a duty. With Hajo Päffgenrath, it's not about drinking as an end in itself, but about a collective toast in a broader sense: contact, atmosphere, stories.
